– Set oven to 400F.  Place all of your dry  & wet ingredients out. Poke a few holes in 2 small, raw sweet potatoes & place them on a baking sheet.  Bake in the oven for about 45 minutes or until soft.

Once baked, allow them  to cool, remove skin & create a mashed sweet potato consistency.  Set aside. – In a large bowl, mix together all of your wet ingredients.

– In a larger separate bowl, mix together all of your dry ingredients.  (Double check your list, it’s easy to forget something.)

– Next, add the wet ingredients to the dry ingredients & mix together using a hand mixer.   Add in the cooled, baked sweet potato and chopped pecans.

– Lightly spray a muffin pan with nonstick baking spray and evenly divide the batter.
